Chicken Enchiladas & More

From Closet Cooking

After weeks of being away from my kitchen and eating out, I decided to tackle my recipe "To Try" list.  Being an avid lover of Pinterest and following lots of foodies, I have a lot of recipes on list to try out.  I follow Kevin, a blogger and creator, of Closet Cooking who sends emails with all kinds of enticing recipes.  The first recipe I decided to knock of my list were his Chicken and Avocado Enchiladas in Creamy Avocado Sauce (you can find the recipe here).  I tweaked things a bit to fit my pallet, but didn't stray too far from the original.

To accompany my enchiladas I made Chipotle's Cliantro Lime Rice using a copycat recipe I found on pinterest from skinnytaste.com.  Again, I tweaked things a bit based on what I had in the pantry - I made the brown rice version.  Lastly I just added black beans (from a can) to complete my meal.

Everything was so delicious!  Sorry I wasn't able to take pictures of what I created.  Currently working with a kitchen with terrible lighting and the camera on my phone.

Giggles With Godmom


Zekeriah is such a character.  He is full of life and energy at every waking moment of the day.  He brings the biggest smile to everyone in his presence and I love that I get to be his godmommy.  And who could resist his infectious giggles!?  Adorable!

It has been eons since I last checked in and it's very evident with the fact that I don't even know what my current weight it.  This picture taken over a month ago is the last time that I weighed myself. After I stopped the Weight Watchers program in January, I failed to maintain a workout routine while eating my way through stress and depression.

A Good Time at Camp Pride

I had the amazing opportunity to attend the Advisors Academy boot-camp hosted by Campus Pride at Vanderbilt University in Nashville, TN.  It was six days of an intense camp learning how to be a professional that affects positive change on my campus as it relates to the LGBT community.  I had such a great time meeting colleagues from all over the country and some national figures advancing and educating within the community.


Although the learning that took place has charged me to make some improvements and changes to my campus, I really enjoyed the "camp" experience.  Never having gone to an over night summer camp as a child, this was my first time having that experience.  To be honest I was really nervous for several reasons: Am I going to be the only person of color? Am I going to be the only straight person? Am I going to feel like an outsider altogether?  No, no and no!

Birthday Rewind #27on27 (Photo Heavy)

So I know that I said I was going to get back to blogging, but I failed, LOL.  I realized that when was blogging I was motivated to do things that brought me joy because I wanted to share all the wonderful fun things I was doing with you.  So to help balance out all the craziness that is work and excitement of starting my own business, I'm getting back to my blog.

The Birthday Rewind

So I turned 27 last month and decided to do something special for my "Champaign Birthday."  Me and my friends took a long weekend trip to Atlanta.  It was my first time there and I wanted to completely unwind, so the weekend theme was "Turn Down for What!?"  I can't say tell you enough how grateful I am to have great friends that would travel half way across the country to help me celebrate.  They're amazing!
